The beef is marinated first, then layered raw with par-boiled rice, fried onions, mint, and whole spices, and the daig is sealed so that meat and rice finish cooking together in their own steam. That sealed “dum” stage is what separates this biryani from a simple mix of cooked rice and cooked meat: the grains take on the flavour of the beef, and the meat comes out soft rather than dry.
